Although best known for its folding knives, Spyderco has a long, proud tradition of making high performance kitchen knives and was the first company to introduce a commercial Santoku (a distinctive Japanese knife similar to a cleaver) to the U.S. market. After a brief manufacturing hiatus, Spyderco has reintroduced its popular line of kitchen cutlery with a few significant improvements. Like the original series, Spydercos new kitchen knives span a full range of sizes and applications, including paring knives, mini paring knives, utility knives, and the Santoku. They are also made with the same unique blade steel as their predecessors: MBS-26. This very exclusive material is a high-carbon stainless steel that is ground exceptionally thin and meticulously heat treated for optimal cutting performance. The handles of Spydercos new breed of kitchen knives are injection molded from tough polypropylene plastic for even greater durability than the original versions. All handles are all molded directly onto the blade tangs and feature a distinctive stepped texture pattern that provides exceptional comfort and control during use. They are also available in several different color choices. Depending upon their intended use, some Spyderco kitchen knives offer the option of either a PlainEdge or fully serrated SpyderEdge blade with a uniquely ground serration pattern that reduces dulling when cutting on a cutting board.
